  • 2½ pounds bulk ground chorizo or chorizo sausage links, removed from casings
  • ½ pound ground pork fat
  • 2 teaspoons fine sea salt
  • 2 teaspoons fresh ground black pepper
  • ½ teaspoon ground cumin
  • Lard or coconut oil, for the pan
  • Keto dipping sauce of choice (optional)
How to Make It
  1. Place the ground chorizo, ground pork fat, salt, pepper, and cumin in a large bowl. Mix well to evenly combine the ingredients. Using your hands, form the mixture into twelve 3-inch patties.
  2. Heat 1 tablespoon of lard or coconut oil in a large pan over medium heat. Sauté the patties in batches for 3 to 5 minutes per side, until cooked through. Add additional fat for the pan as needed.
  3. Serve with the keto dipping sauce of your choice, if desired.
