    How to Make Creamy Coleslaw

    Ketogenic Cookbook - Nutritious Low-CarbThis recipe is a favorite of many of my clients; they tell me that it reminds them of KFC coleslaw, which is creamy and sweet. If you prefer your coleslaw less sweet, just omit the erythritol. Add a few quartered yellow cherry tomatoes for a colorful garnish, if desired.

    • Yield: 6 Servings
    • Preparation Time: 8 Minutes

    Ingredients

    • 4 cups shredded cabbage (about 1 medium head)
    • ¼ cup thinly sliced yellow onion
    For the Dressing
    • ½ cup mayonnaise or Copycat Baconnaise
    • 0.33 cup powdered erythritol
    • ¼ teaspoon stevia glycerite (optional)
    • ¼ cup dill pickle juice
    • 2½ tablespoons lemon juice
    • ½ teaspoon celery seeds
    • ½ teaspoon fine sea salt
    • 0.12 teaspoon fresh ground black pepper
    How to Make It
    1. In a large bowl, combine the cabbage and onion. Set aside.
    2. In a separate bowl, combine the ingredients for the dressing and mix until well combined.
    3. Pour the dressing over the cabbage and onion and gently stir to coat in the dressing.
    4. Refrigerate for 1 hour before serving.
