    How to Make Fattoush

    Cook Healthy and QuickYou can vary the ingredients in this tangy salad, but sumac, pomegranate molasses, and toasted  flatbread are essential to this traditional dish.

    • Yield: 6 Servings
    • Preparation Time: 15 Minutes

    Ingredients

    • handful of fresh lettuce leaves
    • 3 tomatoes, peeled and sliced
    • 1 red or green bell pepper, seeded and sliced
    • 5 scallions, trimmed and sliced
    • small bunch of flat-leaf parsley, coarsely chopped
    • 2 thin flatbreads, such as pita breads
    • 3 tbsp olive oil
    • 1 lemon juice
    • 2 garlic cloves, crushed
    • 1 tsp cumin seeds, crushed
    • salt and freshly ground black pepper
    • 2 tbsp pomegranate molasses
    • 2 tsp sumac
    How to Make It
    1. Arrange the lettuce leaves, tomatoes, peppers, and scallions in a wide, shallow bowl and sprinkle the parsley over the top. Lightly toast the flatbreads, break them into bite-sized pieces, and scatter them over the salad.
    2. In a small bowl, combine the oil and lemon juice with the garlic and cumin seeds. Season well and pour over the salad. Drizzle the pomegranate molasses over the top and sprinkle with sumac. Toss the salad gently just before serving.
