    Superfoods Anti-aging

    Ingredients

    • 2 sweet potatoes, peeled and cubed
    • 1 small red onion, minced
    • 2 cans (each 7.5 oz/213 g) salmon, drained and flaked
    • 1 egg, beaten
    • 1 tbsp Dijon mustard
    • 1 tbsp chopped fresh dill
    • 1 sprig fresh thyme leaves
    • Tabasco to taste
    • Seasoning to taste
    • 1 tbsp olive oil
    • 1 lemon, cut in wedges
    How to Make It
    1. In a saucepan over medium-high heat, cook sweet potatoes in boiling water for about 20 minutes or until tender. Drain and mash potatoes.
    2. Meanwhile, in a bowl, combine onion, salmon, egg, mustard, dill, thyme and Tabasco. Add potatoes and season to taste.
    3. Using your hands, shape mixture into 8 patties, ¾ inch (2 cm) thick.
    4. In a skillet, heat oil over medium heat. Place patties in skillet and cook for 5 minutes on each side.
    5. Serve with lemon wedges.
