    How to Make Quick Raspberry and Vanilla Microwave Pudding

    Diabetic LivingHow’s this for an easy pop-up sweet: five minutes prep and it’s on the table in 20!

    • Yield: 4 Servings (as a dessert)
    • Preparation Time: 5 Minutes
    • Cooking Time: 20 Minutes

    Ingredients

    • Cooking spray
    • 1 large ripe pear, peeled, cored, chopped
    • 120 g fresh or frozen raspberries
    • 2 Tbsp wholemeal self-raising flour
    • 2 Tbsp self-raising flour
    • 2 Tbsp caster sugar or granulated sugar substitute
    • ¼ cup (60 ml) skim milk
    • 20 g light margarine, melted
    • 50 g egg
    • 1 tsp vanilla extract
    • Icing sugar, to serve (optional)
    • Extra fresh raspberries, to serve (optional)
    How to Make It
    1. Spray a 1L (4 cup) microwave dish with cooking spray. Sprinkle pear and raspberries evenly over base.
    2. Combine flours and sugar in a medium bowl. Put milk, margarine, egg and vanilla in a small bowl. Whisk to combine. Add milk mixture to flour mixture and stir until combined.
    3. Pour batter over fruit. Cook on medium/50% for 16-20 minutes or until pudding is just cooked when tested with a skewer. Cover with foil and set aside for 5 minutes. Dust with icing sugar and sprinkle with fresh raspberries, to serve, if you like.
