    How to Make Roast Chicken with Lemon and Thyme

    Ingredients

    • 1 whole chicken (2 to 3 lbs/1 to 1.5 kg)
    • 2 lemons, cut in wedges
    • 3 sprigs fresh thyme
    • 5 cloves garlic, halved
    • 1 tbsp olive oil
    • 3 sprigs fresh rosemary
    • 3 sweet potatoes, cubed
    • 2 stalks celery, sliced on the diagonal
    • 2 red onions, cut in eighths
    • Seasoning to taste
    • 1 lemon, cut in wedges, for serving
    How to Make It
    1. Position rack in center of oven and preheat to 350°F (180°C).
    2. Stuff chicken with lemon wedges, thyme and garlic. Truss the bird and place in a large cooking dish.
    3. In a bowl, combine oil, rosemary, sweet potatoes, celery and onions. Season to taste and spread mixture around chicken. Cook in center of preheated oven for about 1 hour and 40 minutes until the juices run clear.
    4. Empty stuffing and carve chicken.
    5. Serve immediately with sweet potato mixture and lemon wedges.
