    How to Make South of the Border Salad

    Quick & Easy Ketogenic Cooking Meal Plans and Time Saving Paleo RecipesI keep taco seasoning in a large jar in my pantry for easy additions to meals like this one. This salad is one of my easy go-to recipes when I don’t have anything else planned. It is so good!

    • Yield: 4 Servings
    • Preparation Time: 6 Minutes
    • Cooking Time: 5 Minutes

    Ingredients

    • 1 pound 80% lean ground beef
    • 2 tablespoons plus 2 teaspoons Taco Seasoning
    • 4 cups spring salad mix or torn lettuce leaves
    • 4 Taco Bowls (optional; omit for dairy-free)
    • ½ cup salsa
    • ½ cup diced tomatoes
    • ½ cup sliced black olives
    • ¼ cup sliced green onions
    • ½ cup Taco Salad Dressing
    How to Make It
    1. Sauté the ground beef in a large skillet over medium heat, using a spatula to break up the meat into crumbles, until the meat is cooked through, about 5 minutes. Sprinkle the taco seasoning over the meat, stir, and cook for another minute.
    2. Divide the lettuce among four Taco Bowls, if using, or serving bowls. Top each bowl with an equal amount of the cooked beef, salsa, tomatoes, olives, green onions, and dressing.
