    Ingredients

    • 4 cups (1 liter) baby spinach
    • 1 can (19 oz/540 ml) chickpeas, drained and rinsed
    • 1 cup (250 ml) red grapes, halved
    • ½ cup (125 ml) whole pitted black olives
    • ½ cup (125 ml) crumbled light feta cheese
    • 1 cucumber, peeled and sliced
    • 3 green onions, thinly sliced
    For the vinaigrette
    • 2 tbsp olive oil
    • ½ lemon juice
    • 1 ripe avocado, mashed
    • 1 clove garlic, minced
    • Seasoning to taste
    How to Make It
    1. In a salad bowl, mix all ingredients for salad.
    2. In a smaller bowl, whisk together ingredients for vinaigrette.
    3. Drizzle vinaigrette on salad before serving and toss to coat.
