    How to Make Turkey Sushi

Sure, these roll-ups can be eaten without being cut into fun sushi slices, but my kids appreciate the little extra time it takes to make food cute. Plus, I get the bonus of eating the end pieces that are not perfect sushi shapes!

    • Yield: 3 Servings
    • Preparation Time: 5 Minutes

    Ingredients

    • 12 slices roast deli turkey (about 4 ounces)
    • ½ cup plus 2 tablespoons mayonnaise, store-bought or homemade, or any keto-friendly dressing, such as Dairy-Free Ranch Dressing
    • 12 slices provolone cheese
    • 12 thin slices tomato
    • 1 cup arugula, micro salad greens, or torn lettuce leaves of choice
    How to Make It
    1. Place a slice of turkey on a clean work surface with the short end facing you. Spread 2½ teaspoons of mayo or keto-friendly dressing on the turkey. Top with a slice of provolone cheese and then a slice of tomato. Arrange the greens across the top of the tomato.
    2. Starting at the end closest to you, roll it up like a sushi roll and slice into 1-inch pieces. Store leftovers in an airtight container in the fridge for up to 4 days.
