    Slow Cooker Chicken Fajitas Recipe

    Ingredients

    Chicken
    • 4 bone-in, skin-on chicken thighs
    • 2 green bell peppers, thinly sliced
    • ½ cup thinly sliced onions
    • ½ cup chicken bone broth, store-bought or homemade
    • 2 tablespoons Taco Seasoning
    For Serving
    • 8 large Boston lettuce leaves or 4 Zucchini Tortillas
    • ¼ cup chopped fresh cilantro
    • 2 cups salsa
    • 1 cup Simple Taco Salad Dressing
    How to Make It
    1. Place the ingredients for the chicken in a 4-quart slow cooker. Cover and cook on low for 6 hours, or until the chicken is falling off the bone.
    2. Shred the chicken meat with two forks; discard the bones. Place the mixture in a serving dish and serve hot with large lettuce leaves or Zucchini Tortillas. Sprinkle the chopped cilantro over the top, and serve the salsa and dressing on the side.
