    Turkey Sausage Patties with Mushrooms and Tomatoes

    Healthy Cooking for DiabeticsThese high-protein patties make a wonderful change from regular sausages at breakfast time they are also great for dinner served with new potatoes.

    • Yield: 4 Servings
    • Cooking Time: 15 Minutes

    Ingredients

    • 14 oz (400 g) fresh turkey mince
    • 1 tsp salt
    • 1 tsp pepper
    • 1 tsp dried thyme
    • 1 tsp dried sage
    • ½ tsp ground allspice
    • 3 garlic cloves, crushed
    • 4 tbsp oatmeal
    • 1 small egg, beaten
    • 3 tsp light olive oil
    • 14 oz (400 g) chestnut mushrooms, sliced
    • 4 tomatoes, cut into wedges
    How to Make It
    1. Thoroughly combine the turkey with the salt, pepper, thyme, sage, allspice, garlic, oatmeal and egg in a bowl. (The mixture can be stored, covered, in the refrigerator for up to 12 hours.)
    2. Shape the mixture into eight small patties. Heat 2 teaspoons of the oil in a non-stick frying pan, add the patties and fry over a medium heat for about 4 minutes on each side, or until golden and cooked all the way through with no pink inside. Transfer to a plate and keep warm.
    3. Add the mushrooms to the pan and stir for 1 minute, until soft. Pour in the remaining oil, then add the tomatoes and cook, without stirring, for a further 1–2 minutes to warm through. Serve the patties with the mushrooms and tomatoes.
