    Go Orange! Carrot Salad Recipe

    Simple, Fresh & Healthy A Collection of Seasonal RecipesI’m all for anything that helps kids eat healthy foods, so I’ve given this crisp summer salad a silly name and a few sweet surprises. Adults are also welcome to indulge!

    • Yield: 4 to 6 Servings

    Ingredients

    • ¼ cup raisins
    • 1 pound carrots, peeled
    • 1 tbsp lemon juice
    • 1 tbsp orange juice
    • ¼ cup low-fat sour cream
    • ¼ cup light mayonnaise
    • 2 tbsp sugar
    • ½ tsp salt
    • 0.33 cups diced peaches, plums, or fresh pineapple
    How to Make It
    1. To plump the raisins, cover with boiling water for about 5 minutes, then drain.
    2. Grate the carrots by hand or in a food processor with a grating blade. Transfer the carrots to a bowl, add the lemon juice and orange juice, and toss.
    3. In a small bowl, whisk together the sour cream, mayonnaise, sugar, and salt. Toss with the carrots. Mix in the raisins and diced fruit, and serve.
