    How to Make Smoked Salmon and Kale Omelet

    • Cooking Time: 10 Minutes

    Ingredients

    • 1 tbsp olive oil
    • 1 small red onion, minced
    • 1 clove garlic, minced
    • 4 eggs, whisked
    • 1 tbsp minced fresh chives
    • 1 cup (250 ml) coarsely chopped kale, stems removed
    • 2 oz (60 g) smoked salmon, thinly sliced
    • 1 tbsp capers (optional)
    How to Make It
    1. In a skillet, heat oil over medium-low heat and sauté onion and garlic for about 3 minutes.
    2. Add eggs and chives. Stir and continue cooking for about 3 minutes.
    3. Lay kale over omelet and fold omelet in half. Continue cooking for 1 minute.
    4. Top with smoked salmon and capers, if using.
