    How to Make Spicy African Butter

    • Preparation Time: 1 Hour 30 Minutes

    Ingredients

    • 1½ cups (344 g) butter
    • 1 small shallot, finely chopped
    • 2 cloves garlic, pressed
    • 1 tbsp (6 g) grated fresh ginger, or ginger paste
    • ¼ tsp ground cardamom
    • ¼ tsp ground cinnamon
    • ¼ tsp ground cumin
    • ¼ tsp ground turmeric
    • ½ tsp dried oregano
    How to Make It
    1. In a small saucepan, melt the butter, then add the shallot, garlic, ginger, cardamom, cinnamon, cumin, turmeric and oregano. Cook on very low heat until brown specs start forming in the bottom of the pan, about 10 minutes, stirring often and making sure it does not burn.
    2. Strain the butter through a fine mesh sieve lined with cheesecloth, into a clean jar.
    3. The butter can be kept in the refrigerator for up to a month.
