Ingredients

  • 2 bunches parsley, chopped
  • 1 cup (250 ml) chopped kale, stems removed
  • ½ cup (125 ml) chopped fresh mint leaves
  • 1 cup (250 ml) cherry tomatoes, cut in half or quarters
  • 1 cucumber, seeded and diced
  • 1 small red onion, minced
  • 2 tbsp chopped walnuts
For the vinaigrette
How to Make It
  1. In a large bowl, mix all ingredients for salad.
  2. In a smaller bowl, whisk together ingredients for vinaigrette.
  3. Pour vinaigrette over salad and toss to coat.
