    Salmon with Avocado, Grapefruit and Strawberry Salsa Recipe

    Ingredients

    • 1 tbsp olive oil
    • 1 small red onion, minced
    • 1 clove garlic, minced
    • 4 salmon filets (each 4 oz/120 g), skin on
    • 1 avocado, diced
    • 1 small pink grapefruit, diced
    • 15 strawberries, diced
    • Pinch crushed hot pepper flakes
    • ½ lemon juice
    How to Make It
    1. In a skillet, heat oil over high heat and sauté onion and garlic for 3 minutes. Reduce heat to medium and cook salmon for 8 to 10 minutes, depending on thickness.
    2. Meanwhile, in a bowl, combine avocado, grapefruit, strawberries and hot pepper flakes. Drizzle with lemon juice and mix well.
    3. Top salmon with salsa.
    4. Serve with rice or quinoa.
