    Spinach Dip Recipe

    Ketogenic Cookbook - Nutritious Low-Carb

    Ingredients

    For the Dip
    • 1 head roasted garlic
    • 1 (10-ounce) package frozen chopped spinach, thawed and drained well
    • ½ cup chopped green onions (white portions only)
    • 1 cup sour cream or cream cheese
    • 1 cup mayonnaise
    • 1 teaspoon chopped fresh thyme
    • 1 teaspoon fish sauce
    • ½ teaspoon fine sea salt
    • ¼ teaspoon smoked paprika
    • Dash of cayenne pepper
    For Serving
    • 1 loaf Keto Bread
    • 3 tablespoons unsalted butter (or coconut oil if dairy-sensitive)
    • Celery pieces
    • Sliced cucumber
    How to Make It
    1. Squeeze the roasted garlic from the head into a blender or food processor. Add the spinach, green onions, sour cream, mayonnaise, thyme, fish sauce, salt, paprika, and cayenne and blend until smooth. Taste and adjust the seasonings as needed.
    2. Just Before Serving, Make Crostini
    3. Cut the loaf of bread into ½-inch-thick slices, then cut the slices into triangles. Heat the butter in a sauté pan and fry the triangles until golden brown on each side, about 5 minutes.
    4. Serve the spinach dip with fried keto bread, celery pieces, and cucumber slices.
