    Apple Country Cake Recipe

    Simple, Fresh & Healthy A Collection of Seasonal RecipesHere in Apple Country, every family seems to have a cherished apple cake recipe. This moist, heart-healthy version is a fall favorite with my family.

    • Yield: 12 Servings

    Ingredients

    • ½ cup sugar
    • ½ tsp ground cinnamon
    • ¾ cup chopped walnuts, divided
    • 4 cups apples, peeled and diced
    • 1 cup sugar
    • 1½ cups flour
    • 1½ tsp baking powder
    • ½ tsp salt
    • 2 eggs, well beaten
    • ¾ cup low-fat milk
    • ¼ cup butter, melted
    • ¼ cup canola oil
    • Confectioner’s sugar, for dusting
    How to Make It
    1. Preheat oven to 350 degrees.
    2. In a small bowl, mix together sugar, cinnamon, and ½ cup walnuts.
    3. Grease a 9-by-13-inch pan and fill with diced apples. Sprinkle apples with cinnamon mixture.
    4. In a bowl, stir together the flour, sugar, baking powder, and salt.
    5. In a larger bowl, combine the eggs, milk, butter, and oil. Add the flour mixture and combine until smooth.
    6. Pour the batter over apples, allowing time for it to settle between the apples. Sprinkle with remaining nuts.
    7. Bake for about 1 hour or until a toothpick comes out clean.
    8. Before serving, lightly sift powdered sugar over top of cake.
