    How to Make Healthy Granola

    Simple, Fresh & Healthy A Collection of Seasonal RecipesOne of the first wholesome health foods to hit the market in the 1960s, crunchy granola soon became a mainstream staple. I love it layered with fruit in a yogurt parfait perfect for special Sundays and houseguests.

    • Yield: 16 Servings

    Ingredients

    • 4 cups oatmeal (not instant)
    • ½ cup raw wheat germ
    • ½ cup sesame seeds, unhulled
    • 1 cup coarsely chopped raw almonds with skins
    • ¼ cup chopped walnuts
    • ½ cup honey or maple syrup
    • 2 tbsp canola oil
    • 1 tsp vanilla extract
    • 1 tsp ground cinnamon
    • ½ cup chopped dried apricots
    • ½ cup dried cranberries
    How to Make It
    1. Preheat the oven to 350 degrees and lightly spray a large, shallow pan with cooking spray.
    2. In a large bowl, mix together all ingredients except the dried fruit.
    3. Transfer the mixture to a sheet pan and bake for 30 to 35 minutes, stirring occasionally, until golden.
    4. Remove granola from the oven and cool. Add dried fruits. Transfer to a sealed container and store in a cool, dry place for up to three weeks.
