    How to Make Lima Bean and Caramelized Onion Puree

    Ingredients

    • 2 cans (each 19 oz/540 ml) lima beans, drained and rinsed
    • 1 lemon juice
    • ¼ cup (60 ml) chopped fresh parsley
    • ¼ cup (60 ml) chopped fresh cilantro
    For the caramelized onions
    • 3 tbsp olive oil
    • 2 red onions, sliced
    • 1 clove garlic
    • 1 tsp whole cumin seeds
    • Seasoning to taste
    How to Make It
    1. In a skillet, heat oil over medium-high heat and caramelize onions and garlic, stirring constantly, for about 20 minutes. Reduce heat to medium and continue cooking another 5 minutes or until onions are thoroughly caramelized. (Add water if onions stick to skillet.) Add cumin and season to taste.
    2. In a food processor, purée lima beans. Add caramelized onions, lemon juice, parsley and cilantro. Mix until slightly lumpy texture is obtained. Season to taste.
    3. Serve with Kale Chips.
