    How to Make Mexican Meatloaf Cupcakes

    Quick & Easy Ketogenic Cooking Meal Plans and Time Saving Paleo RecipesWe eat with our eyes, and if you make food fun, kids are likely to enjoy it, too! This recipe is a perfect example. My son Kai adores savory food. He doesn’t have much of a sweet tooth, and when I asked him what he wanted for his birthday cake last year, he said meatloaf. So I made him these meatloaf cupcakes. (Because both my other son, Micah, and I have a sweet tooth, I also made my Cinnamon Swirl Cheesecake from The Ketogenic Cookbook, making everyone happy!)

    • Yield: 6 Servings
    • Preparation Time: 10 Minutes
    • Cooking Time: 20 Minutes

    Ingredients

    • 2 pounds 80% lean ground beef
    • 2 large eggs, beaten
    • 2 cups shredded pepper jack or sharp cheddar cheese (about 8 ounces)
    • ½ cup salsa
    • ¼ cup chopped fresh cilantro (optional; see Note)
    • 2 teaspoons Taco Seasoning
    • 1 teaspoon finely chopped garlic, or cloves from ½ head roasted garlic
    For Garnish
    • Guacamole or sour cream
    • 6 cherry tomatoes
    How to Make It
    1. Preheat the oven to 350°F. Generously grease a 6-well jumbo cupcake pan with coconut oil or butter.
    2. In a large bowl, use your hands to mix together the ground beef, eggs, cheese, salsa, cilantro (if using), taco seasoning, and garlic. Form the mixture into six 3-inch balls and place in the wells of the cupcake pan.
    3. Bake for approximately 20 minutes, or until the internal temperature reaches 160°F.
    4. Remove from the oven and top with guacamole or sour cream for the frosting and a cherry tomato!
