Health benefits of Babaco fruitBabaco fruit is the relative of papaya which is seedless with smooth skin and a unique flavor. The shape of this fruit is star shaped when sliced. It is added to the sauces, smoothies and salsa. It is an inherent to the Andes of northwestern South America from Colombia south to central Chile. The shape of the Babaco fruit is cylinder. The skin of the fruit is juicy yellow. When the fruit is yellow it is eaten raw but the green fruit should be well cooked. Fruit salads also adds the pieces of babaco. It can be processed in the blender with sugar, ice cream, honey or frozen yoghurt. The papain amount is three times more than in papaya. It is a great source of Vitamin C and A. Vitamin C enhance healthy gums and speeds up the healing process. It possesses thiamine, riboflavin, water, calcium, potassium, magnesium, fat, ascorbic acid, riboflavin, niacin, protein, sodium, iron and carbohydrate. The babaco is believed to be originated from the Central South Highlands of Ecuador. It was cultivated before the arrival of Europeans in Ecuador. Then the babaco was introduced to New Zealand. Then it was commercially grown in Israel and Middle Eastern parts. The Babaco was introduced to the Southern California by Steve Spangler in 1970’s.

Babaco-Fruit Recipes

1. Babaco chutney


  • 25 Mint leaves
  • 1 Fresh green chilli, chopped
  • 1 tbsp. white cumin seeds
  • 1 tbsp. Mustard seeds
  • Salt, as required
  • Water, as required
  • 4 sm Ripe Babacos


  1. Wash the babacos, slice into rings or lengths, remove the seeds and cut it into pieces.
  2. Put the babacos, together with the mint leaves, green chillies, cumin seeds, mustard seeds and salt, into a mortar, and pound with the pestle (or use a silbatta) into a pulp.
  3. Add water as needed to thin the chutney to the desired consistency.
  4. Refrigerate and serve.

2. Babaco Syrup


  • 1 whole babaco
  • 1-2 cups of white sugar
  • Water as needed
  • 1 stick of cinnamon
  • 2 glass of orange juice


  1. Wash the babacoes, peel it off and cut it into pieces.
  2. Put all the ingredients in a large vessel and let boil on medium heat for 30 minutes, stir occasionally.
  3. Remove the cinnamon stick and let cool.
  4. Refrigerate the unused portions for upto five days.
  5. This syrup can be served as a delicious topping for ice cream, or plain as a simple, or a refreshing dessert after a large meal.
