    Broccoli Frittata Recipe

    Superfoods Anti-aging

    • Cooking Time: 20 Minutes

    Ingredients

    • 1 tbsp olive oil
    • 1 small red onion, minced
    • 2 cloves garlic, minced
    • 2 red peppers, thinly sliced
    • 1½ cups (375 ml) broccoli florets
    • 8 eggs
    • ½ cup (125 ml) milk
    • ½ cup (125 ml) crumbled feta
    How to Make It
    1. Preheat oven to 350°F (180°C).
    2. In an ovenproof skillet, heat oil over medium heat and sauté onions, garlic, peppers and broccoli for about 5 minutes.
    3. Meanwhile, in a bowl, whisk eggs. Add milk and cheese. Pour into skillet and stir for 2 minutes.
    4. Continue cooking in preheated oven for 10 minutes or until eggs have set and frittata has risen.
    5. Using a spatula, slide frittata onto a cutting board. Divide into 4 equal servings.
