    How to Make Lima Bean Wraps

    Ingredients

    For the lima bean purée
    • 1 tbsp olive oil
    • 1 small red onion, finely minced
    • 5 cloves garlic, minced
    • 1 red pepper, thinly sliced
    • 1 can (19 oz/540 ml) lima beans, drained and rinsed
    • ½ lemon juice
    • 3 tbsp chopped fresh parsley
    • Thyme and sage, to taste
    • Salt, pepper and paprika, to taste
    For the wraps
    • 8 collard green leaves, blanched 15 seconds in boiling water
    • 1 beet or 1 carrot, grated
    • ¼ cup (60 ml) alfalfa sprouts
    • 1 avocado, sliced
    • 2 tbsp crushed walnuts
    How to Make It
    1. In a skillet, heat oil over high heat and sauté onion, garlic and pepper for about 5 minutes. Let cool for 5 minutes.
    2. Add lima beans, lemon juice, parsley, herbs and seasonings. Transfer to a blender and purée. Add water until desired consistency.
    3. Divide mixture among collard green leaves. Add beets, alfalfa sprouts, avocado and walnuts. Tuck ends inward and roll.
